This is the salad my family requests weekly. The name says it all - Yummy Salad. Everyone gets a job and we make it together. Keep the recipe close until you memorize it!

DIRECTIONS

Method 1 - Quick Chicken Prep

  • Use a rotisserie chicken from your favorite grocery store all cooked and ready to shred.

Method 1 - Home Cooked Chicken Prep

  • Season your chicken breasts to your liking — I like to sprinkle some garlic powder, seasoned salt, and pepper on it.

  • Roast chicken for 15-18 minutes (depending on thickness) at 450° until a internal temperature is 165°F.

Dressing/Assembly

  • Prepare the Dressing by placing all the ingredients in a food processor or bullet and blend until smooth. That was easy. :)

  • Assemble all the salad ingredients in a bowl.

  • Cut or shred the chicken and place in bowl.

  • Toss salad with dressing and enjoy!


INGREDIENTS

Salad Ingredients

  • 8 cups Romain or Spinach or a Mix, chopped

  • 1/4 cup Red Onions, sliced

  • 1/2 cup Feta Cheese, crumbled

  • 1/2 cup Candied Pecans

  • 1 avocado, diced

  • Chicken breast, cooked and seasoned

Dressing Ingredients

  • 1 cup fresh basil Leaves (basil paste works in a pinch)

  • 3/4 cup Olive Oil

  • 1/2 cup Vinegar (red wine vinegar is our favorite, but you can use apple cider vinegar also)

  • 1 clove garlic crushed (or you can use the juice from the crushed garlic jars to taste)

  • 3 tablespoon honey (sugar can be substituted, start with 2 tablespoons and then adjust to taste)

  • 1/4 teaspoon sea salt

  • 1/2 teaspoon pepper

PREP NOTES

  • Start by preparing chicken first.

  • While the chicken is cooking, prepare the dressing, then assemble all salad ingredients.
