This is the salad my family requests weekly. The name says it all - Yummy Salad. Everyone gets a job and we make it together. Keep the recipe close until you memorize it!
DIRECTIONS
Method 1 - Quick Chicken Prep
Use a rotisserie chicken from your favorite grocery store all cooked and ready to shred.
Method 1 - Home Cooked Chicken Prep
Season your chicken breasts to your liking — I like to sprinkle some garlic powder, seasoned salt, and pepper on it.
Roast chicken for 15-18 minutes (depending on thickness) at 450° until a internal temperature is 165°F.
Dressing/Assembly
Prepare the Dressing by placing all the ingredients in a food processor or bullet and blend until smooth. That was easy. :)
Assemble all the salad ingredients in a bowl.
Cut or shred the chicken and place in bowl.
Toss salad with dressing and enjoy!
INGREDIENTS
Salad Ingredients
8 cups Romain or Spinach or a Mix, chopped
1/4 cup Red Onions, sliced
1/2 cup Feta Cheese, crumbled
1/2 cup Candied Pecans
1 avocado, diced
Chicken breast, cooked and seasoned
Dressing Ingredients
1 cup fresh basil Leaves (basil paste works in a pinch)
3/4 cup Olive Oil
1/2 cup Vinegar (red wine vinegar is our favorite, but you can use apple cider vinegar also)
1 clove garlic crushed (or you can use the juice from the crushed garlic jars to taste)
3 tablespoon honey (sugar can be substituted, start with 2 tablespoons and then adjust to taste)
1/4 teaspoon sea salt
1/2 teaspoon pepper

Start by preparing chicken first.
While the chicken is cooking, prepare the dressing, then assemble all salad ingredients.
