This simple dish always brings me back to my childhood whenever I would visit my Lola (grandmother). I hope the aroma, warmth, and the savory of this dish comforts you and brings you joy as it does me.
DIRECTIONS
Meat Prep
In a medium dutch oven over medium high heat.
Add the oil and sear the pork until browned.
Add to Browned Meat
Add the vinegar, soy sauce, garlic, bay leaves, peppercorns, sugar, and water and bring to a boil.
Reduce the heat to medium low, cover, and simmer for 1 hour.
Remove the cover and increase the heat to medium.
Continue simmering for another 30 minutes or until sauce reduces.
Serve over rice.
INGREDIENTS
2 tablespoons vegetable oil
2 pounds of pork shoulder
1/4 cup of white vinegar
1/3 cup low sodium soy sauce
6 cloves of garlic - minced
2 bay leaves
2 teaspoons of black peppercorns
2 teaspoons of sugar
2 cups of water
Rice (measure to preference)

Cut pork in cubes
Can use a spice bag or tied in cheesecloth if desired for the black peppercorns
