This simple dish always brings me back to my childhood whenever I would visit my Lola (grandmother). I hope the aroma, warmth, and the savory of this dish comforts you and brings you joy as it does me.

DIRECTIONS

Meat Prep

  • In a medium dutch oven over medium high heat.

    • Add the oil and sear the pork until browned.

Add to Browned Meat

  • Add the vinegar, soy sauce, garlic, bay leaves, peppercorns, sugar, and water and bring to a boil.

  • Reduce the heat to medium low, cover, and simmer for 1 hour.

  • Remove the cover and increase the heat to medium.

  • Continue simmering for another 30 minutes or until sauce reduces.

  • Serve over rice.


INGREDIENTS

  • 2 tablespoons vegetable oil

  • 2 pounds of pork shoulder

  • 1/4 cup of white vinegar

  • 1/3 cup low sodium soy sauce

  • 6 cloves of garlic - minced

  • 2 bay leaves

  • 2 teaspoons of black peppercorns

  • 2 teaspoons of sugar

  • 2 cups of water

  • Rice (measure to preference)

PREP NOTES

  • Cut pork in cubes

  • Can use a spice bag or tied in cheesecloth if desired for the black peppercorns
