RED ALE SKIRT STEAK

Growing up, the summers were always some of the best days for food in my family. My entire family would make various dishes for our cookouts. The one item that was constant but always kept changing was the skirt steak. The main dish that would constantly change in flavor depending on who hosted. One uncle would use more lime, another more onion, but the one ingredient that always stayed consistent was the beer used to marinate in — Modelo.

As I grew up and began to improve my cooking skills and also my recipes. For this version I took some of the ingredients used by my family, but put my American spin on it to create my own version.

DIRECTIONS

Blend All Together

  • Cut Red onion in half.

  • Cut the stem from the peppers.

  • Add garlic cloves whole.

  • Add Cilantro Bunch.

  • Add 2 Red Ale Beers.

  • Fully blend.

Meat Prep

  • Cut Skirt steak to desired size.

  • Lightly Season both sides of meat with steak seasoning and place flat on tray.

  • Pour in a small layer of blended ingredients.

  • Add next layer of meat and repeat step 3.

  • When all Meat is placed in pour in remaining blended ingredients.

  • Top off tray with 1 red ale beer to make sure all of the meat is submerged.

  • Marinate for 15-24 hours.

  • Grill meat to desired temperature.

  • Add fresh squeezed lime to the meat.


INGREDIENTS

To Marinate

  • 3 serrano peppers

  • 1/2 red onion

  • 5 garlic cloves

  • 1 bunch cilantro

  • 3 (12 ounces) red ale beer of choice

    • Smithwicks Red Ale is used for this recipe.

Meat

  • Steak seasoning

  • Limes

  • 4 pounds inner skirt steak

PREP NOTES

  • Marinate for 15-24 hours to allow the malt flavor to bond with the meat.

  • 3 serrano peppers gives a small kick. Add more for more for a spicier flavor.
